The twist to my homemade mild Buffalo wing sauce recipe

Since its inception in 1964, buffalo wing sauce has become a phenomenon that quickly swept over the entire nation.

It made its way into bars, diners and restaurants as the number one chicken wing sauce.

However, the original buffalo wing sauce can be a bit too spicy for some people.

This is why I decided to make my own homemade recipe that packs less heat.

For this purpose, I replaced the cayenne pepper with the noticeably less spicy smoked paprika.

You can also substitute cayenne with dried ancho chile powder as long as you can get your hands on it.

Another change I made to the original formula was to add a dash of Worcester sauce for some umami flavor.

By the way, I also have a recipe for garlic parmesan sauce for Buffalo wings if you’d like to try that as well.

Ingredients

  • Hot sauce is the main source of heat. You can use Frank’s red hot sauce or any other hot sauce with a similar heat level.
  • Butter is used as the base for this sauce. It will add a rich, creamy flavor that’s not present in other hot sauces.
  • Tomato sauce will balance the heat of the hot sauce and provide some sweetness.
  • Worcester sauce adds a touch of umami flavor.
  • Apple cider vinegar acts as a preservative and gives the sauce a slight tangy flavor.
  • Garlic powder will bring out the taste of the other ingredients.
  • Smoked paprika gives the sauce a slightly smoky flavor, without making it too spicy.

How to make it

Check out the recipe card at the end of this article for detailed, step-by-step instructions.

  1. Melt the butter on low heat on your stove top.

Be careful not to burn it or brown it too much as this will give the sauce a bitter taste.

You can also melt the butter using a warm water bath instead.

To do this, cut the butter into small pieces and put it in a small bowl.

Then, place the smaller bowl with the butter in a large bowl filled with warm water until it melts.

  2. Transfer the melted butter in a large container along with the rest of the ingredients and blend them together with a hand blender.

You can also use a food processor for this purpose.

Blending the sauce instead of cooking it will emulsify it and prevent it from separating.

If you’re using a mild hot sauce as a base, you can add a few drops of tabasco to bring up the heat a notch.

  3. Once you blend the sauce, you should let it cool off and transfer it into a glass jar before serving.

Storage

If you have any leftovers, you can store them in the fridge for up to three days.

Before serving, you should reheat the sauce in the microwave for 30 seconds.

This will dissolve the hardened butter and bring back the original texture of the sauce.
